I was just at a chinese restaurant that had granite counters used on the entire buffet line, I was under the impression that surfaces used in food service had to have an NSF rating, what am I missing?

I don’t think Chinese restaurants play by the same rules, at least around here.

Serving areas can have granite, but the prep areas cannot.

I’ve heard the grease from the dog meat seals the granite. That must be what General Tso’s Chicken is – mmm!
